Dutch Oven
A Dutch Oven or casserole is a great investment as it is an all-in-one cooking option. It can go from stovetop to oven, or you can use it for boiling things. A one-pot meal saves on cleanup.

Baking sheet/air fryer
We mostly use the large baking sheet that came with the oven along with a couple of smaller ones for when one isn’t enough.
Frying pan/s
We have four but really only ever use two of them. A large stainless steel shallow pan for most things like a kimchi fried rice or for stir fry and a heavy enamelled pan for making sauces that like a longer cook time especially tomato sauce. If I had to chose one I would keep the cast iron enamelled pan – though it is heavy and you can’t easily toss it around.

Food processor
Our current food processor is years old and due for replacement – it only knows one speed and you turn it on and off at wall to make it go. But it does the job. Used for making hummus, banana bread and muesli biscuits.
Pressure cooker
We use a pressure cooker for cooking dried beans and hard veggies like beetroot. Also a great way to quickly make soups. We use a modern style pressure cooker which because of the its locked down design should not explode. I’ve never used the older style with the jiggly valve on top – these are the scary ones. There are also the all in one multi cookers. Once you know how to use this essential item you’ll realise its value. It also doubles as a regular large saucepan.

Good knives
I have a set of knives that I’ve had for 40 years and of these really only use the chef’s knife. I recently learned how to sharpen it properly and like any cook will tell you it is best to have sharp knives. We also have various Victronox knives which are the second most used knives.

Basic set of other kitchen utensils
A regular grater and a Microplane, peeler, juicer, silicone spatulas and brush etc.
