This is one of our go to plant-based meals combining a wide variety of ingredients into a healthy and satisfying meal. In a pressure cooker it can be done in less than half an hour. Great with bread or on rice or just by itself if you want to keep the calories down.

Ingredients
- 1 onion chopped
- 2 carrots chopped
- 2 sticks celery chopped
- 1/2 capsicum chopped
- 1-2 cloves garlic minced
- 1 potato
- Cooked/canned beans and barley
- 1 can tomatoes
- 6 mushrooms
- Water
- Salt to taste
- Chilli if desired
- Stock powder (e.g. Vegeta or Massels)
- Pepper
- Herbs/Bouquet garni – oregano, parsley, thyme, bay leaf, basil, rosemary
Saute the onions, carrot, celery, capsicum, potato and garlic. After a few minutes add tomato/tomato paste and water and cook until veg especially potato has softened. In a pressure cooker I usually do 5-6 minutes otherwise cook for around 15-20 minutes. Add beans/lentils and mushrooms and cook further 10 minutes and then finish with herbs and adjust salt and pepper.
