A basic lemon vinaigrette dressing for all sorts of salads.
A basic lemon vinaigrette dressing can be made by combining lemon juice and olive oil in the proportions of 3:1 along with salt to taste. Other additions include garlic, dijon mustard and a touch of sugar if needed. I usually use the juice of one or two lemons depending on size and then blending the required amount of oil to make the dressing.
Ingredients:
- Juice of 1 lemon (about 50ml)
- 1 clove garlic, grated
- ½ tsp salt
- 1 tsp Dijon mustard
- ½ tsp sugar (optional)
- Olive oil — 3 parts oil (150 ml) to 1 part lemon juice (50ml)
Method:
- Whisk the lemon juice, garlic, salt, mustard and sugar together.
- Whisk in the olive oil.
- Taste and adjust with a little more oil if needed.
This will keep for months in the fridge. Bring up to room temperature before whisking again as the oil and lemon will seperate.
