Cauliflower tabouleh

This salad dish replaces tabouleh with riced cauliflower. While tabouleh is plant-based (wheat) cauliflower is a lot easier to prepare and is undoubtedly more healthy. Whizz up the cauliflower in a food processor for just a few seconds or break it by hand and then chop until the size of rice grains.

Ingredients

  • half a cauliflower, riced.
  • 2 cups chopped fresh parsley
  • 1 cup chopped fresh mint
  • 2 chopped spring onions
  • lemon vinaigrette dressing to taste
  • chopped tomatoes
  • salt and extra lemon to taste

Method

Rice the cauliflower in a food processor. Combine all ingredients in a large bowl.  Adjust lemon dressing and salt.
