These granola muesli slices look like they contain just about everything we have in the pantry and the process here is kind of elaborate.
For a simpler version, blend the following ingredients in a food processor until it starts to clump – oats, fruit, dates, syrup, peanut butter, nuts, seeds, spices, extra sugar. After processing, add whole seeds and fruit for texture and added water to get a dough like consistency.
Whatever combo of seeds, nuts and fruit you have on hand is fine to use. Adding fruit like banana or apple will give a less dense soft and chewy texture – you may need extra oats and seed mix to soak it up. You can also form these into balls and/or you can enjoy this raw/uncooked.

- 1 cup cashews
- 2 cups rolled oats
- 1 cup walnuts
- ½ cup mixed dried fruit
- 2 weetbix (optional)
- 1½ tsp cinnamon
- 1 tsp mixed spice
- 1 large tbsp peanut butter
- 1 tbsp golden or maple syrup
- 7 or so dates (optionally pre-soaked in boiling water to soften)
- 1 tsp vanilla extract
- ½ tsp ground cardamom (optional)
- 1 tsp lemon zest (optional)
- a little water during processing, to help it come together
These ingredients were kneaded in after processing but you could just include these in the processor if you want.
- ½ cup mixed dried fruit (a second batch)
- ½ cup chia seeds, soaked in a little water
- 50g sesame seeds
- 100g hemp seeds
- 2 tbsp brown sugar (optional)
- 1 small tsp salt (optional)
